APPLE PHYLLO STRUDELS (Crispy Cinnamon Apple Pastries)

If you’re looking for a dessert that’s elegant enough for entertaining but simple enough for a weekend baking project, these Apple Phyllo Strudels are an excellent choice. Crisp, buttery layers of phyllo pastry wrap around a warm cinnamon apple filling, creating pastries that are light, flaky, and packed with comforting homemade flavor.

Using store-bought phyllo dough makes this recipe much easier than preparing a traditional apple strudel from scratch, while still delivering the delicate, crisp texture that makes European-style pastries so irresistible. Each bite offers a beautiful contrast between the crunchy golden pastry and the soft, lightly spiced apples inside.

The filling is intentionally simple. Fresh apples, butter, cinnamon, sugar, and raisins cook together until tender, allowing the natural sweetness of the fruit to shine without becoming overly sugary. Because the filling is cooked before baking, the apples become perfectly tender while the pastry stays wonderfully crisp.

These apple phyllo strudels are equally at home as a cozy fall dessert, a holiday pastry, or an afternoon treat served with coffee or tea. Dusted with powdered sugar while still warm, they look elegant enough for guests but are easy enough to make whenever you’re craving something homemade.

Whether you’re new to working with phyllo pastry or have baked with it before, this recipe delivers reliable, bakery-style results using simple ingredients and straightforward techniques.

WHY YOU’LL LOVE THESE APPLE PHYLLO STRUDELS

One of the best things about these pastries is the contrast in texture. The paper-thin layers of phyllo bake into an incredibly crisp, delicate shell, while the apple filling remains soft, juicy, and warmly spiced with cinnamon.

Unlike heavier desserts made with pie dough or puff pastry, phyllo creates a lighter pastry that lets the fruit filling remain the star. Brushing each sheet lightly with butter helps create beautifully golden layers without making the finished pastries feel rich or heavy.

Cooking the apples before assembling the strudels also improves the final texture. It allows excess moisture to evaporate, concentrates the flavor, and helps prevent the pastry from becoming soggy during baking.

Another reason this recipe is so dependable is its simplicity. The ingredients are easy to find, the preparation is straightforward, and the pastries can be served warm, at room temperature, or reheated for another day without losing their crisp exterior.

Whether you’re baking for family, entertaining guests, or simply looking for a comforting homemade dessert, these Apple Phyllo Strudels offer classic bakery flavor with surprisingly little effort.

Ingredients

FOR THE APPLE FILLING
  • 2 medium-large Gala apples peeled, cored, and cut into small cubes
  • 50 g granulated sugar
  • 1 tsp cinnamon
  • 30 g butter
  • 35 –45 g raisins about 1/4 cup
FOR THE PHYLLO

  • 4 sheets phyllo dough
  • 20 g melted butter
  • 20 g vegetable oil
FOR FINISHING

  • Powdered sugar for dusting

Method

  1. Preheat oven to 180°C (350°F) fan-forced and line a baking tray with parchment paper.
  2. In a large skillet, combine the apples, sugar, cinnamon, and raisins.
  3. Cook over medium heat, stirring frequently, until the apples begin to soften and release their juices, about 6–8 minutes.
  4. Add the butter near the end of cooking and continue cooking for another 1–2 minutes until the apples are tender but still slightly structured. Remove from heat and let cool completely.
  5. In a small bowl, mix together the melted butter and vegetable oil.
  6. Lay one sheet of phyllo dough on your work surface with the long side facing you. Brush lightly with the butter-oil mixture.
  7. Repeat with the remaining phyllo sheets until all 4 sheets are layered.
  8. Cut the layered phyllo into 4 equal rectangles.
  9. Spoon 2–3 tablespoons of apple filling near the bottom center of each rectangle.
  10. Fold the short sides inward, then roll tightly into logs.
  11. Place seam-side down on the prepared baking tray and brush the tops with remaining butter mixture.
  12. Bake for 28–35 minutes or until deeply golden and crisp.
  13. Let cool slightly, then dust generously with powdered sugar before serving.

Notes

* Adding the butter near the end of cooking keeps the filling rich without becoming oily.
* Do not overcook the apples— they should stay slightly firm for the best texture.
* Let the filling cool completely before assembling to avoid soggy phyllo.
* Keep unused phyllo covered with a towel while working so it does not dry out.

TIPS FOR THIS RECIPE

  • Let the filling cool completely. Warm apple filling creates steam inside the pastry, which can soften the delicate phyllo layers before they have a chance to crisp in the oven. Let the filling cool to room temperature before assembling the strudels for the flakiest results.
  • Keep the phyllo covered. Phyllo dough dries out very quickly once exposed to air. Keep the unused sheets covered with a lightly damp kitchen towel while you work so they remain flexible and easy to fold without tearing.
  • Brush lightly between layers. You don’t need to soak the pastry with butter. A thin, even coating between each sheet is enough to create beautifully crisp, golden layers while keeping the finished pastries light and delicate.
  • Bake until deeply golden. Don’t remove the strudels as soon as they begin to brown. Phyllo develops its best flavor and crisp texture when baked until it reaches a rich golden color over the entire surface.
  • Dust just before serving. Powdered sugar absorbs moisture over time. For the prettiest presentation, dust the strudels immediately before serving so they keep their fresh bakery-style appearance.
